Weather in all of it’s extremes is often to be marvelled at… admired… but unfortunately not always enjoyed. The soaring heat that our part of Australia has been experiencing recently has been reason enough to stock the freezer with copious quantities of icy-poles, to serve up antipasto platters for dinner and to lunch on a variety of cooling salads.
We enjoyed this salad with dinner the other night, while catching up with a dear friend who we hadn’t seen in a while and it was so refreshing that I decided to make it again for lunch today. It is adapted from a recipe in Nigella Lawson’s book ‘Forever Summer’.
Watermelon Feta and Olive Salad | Gather and Graze
- 750g Watermelon (diced)
- 125g Feta Cheese (diced or crumbled)
- 8 – 10 Kalamata Olives (pitted and quartered)
- Handful of Fresh Mint (Finely Sliced)
- Drizzle of Extra Virgin Olive Oil
- Juice of ½ a Lime
Arrange watermelon, feta, olives and mint in a serving bowl, drizzle over oil and lime juice.
- Option of adding a little finely sliced red onion (tossed through with the lime juice) to the salad.
Defo going to have to bookmark this page and try it out when summer finally arrives! Looks absolutely amazing, i love interesting salad recipe like this one!
🙂 That’s fabulous – thanks so much for your kind comment! Love to hear what you think, if you give it a try!

Gorgeous photos in this post!! Wow. I couldn’t help but keep looking at all of those beautiful little ribbons of mint… so delicate. Love the combination of feta, watermelon and mint. I’ve never tried it with olives too but I think I’ll have to do that very soon! Thanks for the inspiration x
Thanks Laura! This time of year I could eat this salad every other day – sooo refreshing with the watermelon and mint! Great little kick of salt with the olives and feta. 🙂
Your beautiful looking salad has me dreaming of summer. 🙂
Summer will be here before you know it Karen! Thanks so much for your lovely comment! Cheers, Margot
What a beautiful salad, Margot! watermelon and feta are amazing together. I think it’s perfect on a hot day!
They do work wonderfully together, don’t they!? Have a great long weekend Jo and a very Happy Australia Day! 🐨
This is beautiful! Next summer…
Thanks so much Mimi! 🙂
It’s brrrrr cold here in NY BUT that does not stop me from gazing dreamily and covetously at this beautiful and delicious salad. Keep cool Margo! xo
Thanks Azita! You wouldn’t believe it, but it’s cooled off so much that I’ve been wearing a warm top all afternoon/evening! Quite a pleasant change really… not that I’m wishing our summer away! 🙂
I make something very similar to this and LOVE it as well. Can’t wait for summer to come here – as I look at snow on the ground.
So many options for gorgeous summer salads, but I think this one must be the most refreshing of all for those really hot days! Hope the spring bulbs start pushing through the earth soon for you Mary – such a wonderful feeling to know that spring and summer are on their way. 🌷
How refreshing and a great salad for those scorching days. I love feta and olives but I have never thought to add watermelon. Hope you are surviving the heat 🙂
Thanks Karen, hope you give it a try sometime – fabulous almost year-round in Queensland!
I think we’re over the worst of the weather here… for now, though better not speak too soon! Looks like you have a few hot days coming your way this week, perfect for some big icy-cold jugs of your gorgeous lemonade!
Watermelon curry? Actually, I’ve never been a fan of watermelon, unless it’s served as a salad like this. I’ll be curious as to what saucygander comes up with. I’m just hoping I won’t be dreaming about it! As that’s where I’m off to.
Yes, I’m rather intrigued by the watermelon curry too – can’t wait to see if it’s a success!
Hope your dreams were fruity-curry free last night! 🙂
I bet this was quite refreshing during your heat wave! Looks beautiful Margot!
It really was Lidia! Such a simple salad, but it delivers so well in flavours.
Thankfully the temperature has dropped off a little today, so we’ve enjoyed having all the windows wide open to let the cool breezes pass through! So lovely!
One of my all time favourite salads right there!
It all works so well together doesn’t it?! Cheers, Margot
With a nice piece of lemon and oregano lamb it is the bomb!
How funny, that’s almost exactly what we ate it with for dinner the other night… lamb marinated in garlic, thyme and olive oil and cooked on the BBQ – it was beautiful!
Great minds eh
This is my favorite salad and I can’t WAIT for summer watermelon so I can make thisX!
Not too long and you’ll be basking in that New York sunshine! The only down-side to that is that it means I’ll be freezing my backside off and craving watermelon salads! 😉
This is such a wonderful recipe Margot! I love every ingredient in this dish. The sweetness of water melon mingling with the saltiness of feta and olives along with a surprise visit of mint plus good olive oil and lime juice to round it all up. I’m drooling already 🙂 Warmest, Danny
Danny, it really is one of the most refreshing summer salads out there! Sweet, ripe watermelon is the perfect fruit for keeping hydrated at this time of year – we seem to be eating our fair share of it at the moment! Great to hear from you, as always! 🙂
Looks delicious and makes me long for summer! Greetings from a chilly Sweden (Stockholm -10 C, the northern part -41 C) covered in snow. 🙂
Thanks Meggie… spring and summer are on their way! I’d love to visit Sweden one day – despite the cold, it must be incredibly beautiful this time of year all covered in snow! I’ll have to learn to ski properly one of these days, or at least be able to walk in a pair of snow shoes!
Isn’t the heat stupid? We don’t have air conditioning, so in our house, there has been no baking or anything that requires more than 10 minutes of cooking. We’ve had very similar salads, so refreshing, and a cool kitchen! 😀
I was actually looking at a couple of watermelon curry recipes. They sounded intriguing, and potentially quite tasty….
No air conditioning, whaaat? Watermelon curry, WHAAAT?? Now, that’s intriguing AND creative! But I love your watermelon feta olive salad, too, Margot. That’s more like what I’d have in mind when and if the heat comes back, oh…who knows when. So freaking cold last night, I had a snuggie on top of my sweater. In front of the fireplace! 🙂
Thanks so much Angie! Bring on Autumn (and Spring, for you) I say!
Wow, watermelon curry – really hope you give one a try and post the results!
Much nicer day today… 26degC and cloudy – delightful! 🙂
Yes, much better weather, I’ll even take the rain! I do plan to try the watermelon curry, though husband just looks lost and confused whenever I put watermelon and curry in the same sentence, poor lamb. 😉
