For those who I’ve managed to catch (just in the nick of time!) with their hand reaching out… hovering in guilty indecision… I ask you very kindly to leave that packet of cookies/biscuits on the supermarket shelf… step away from the cookie aisle… and gather up the ingredients listed below instead. This easy, no-fuss recipe is perfect for bringing little people (or big people who say that they can’t cook…) into the kitchen to help out with some simple measuring, stirring and scooping… I don’t care what anyone says… baking is deliciously fun! It brings people together and there’s always the bonus that your cookie jar will be well-stocked for the weekend!
With my cookie jar already filled to the brim, I’ll be looking out for something else to cook with my kids this weekend. My inspiration is sure to come from the gorgeous crowd, already starting to arrive at Fiesta Friday this week! Lemon White Chocolate Cookies | Gather and Graze
Ingredients
- 125g (½ Cup) Unsalted Butter (softened)
- 160g (⅔ Cup) Raw (Caster) Sugar
- 1 Free-Range Egg
- Zest of 1 Lemon
- 2 Tablespoons Lemon Juice
- 190g/1¼ Cups Plain Flour (sifted)
- 1 Teaspoon Baking Powder (sifted)
- Pinch of Salt
- 150g (¾ Cup) White Chocolate (chopped)
Instructions
Pre-heat the oven to 180°C. Line 2 baking trays with parchment/baking paper.
Cream the butter and sugar in an electric mixer until light and fluffy. Add the egg, lemon zest and juice and continue to mix until well combined. Stir in the sifted flour, baking powder and salt and when almost combined, add the white chocolate and stir to evenly distribute.
Place teaspoonfuls of mixture onto the lined baking trays (allowing space between each cookie for them to spread) and bake for about 9-10 minutes, or until golden.
Note: Keep a close eye on these (particularly if baking on 2 shelves of the oven), as the bases can go from golden to burnt in the blink of an eye if you leave them for too long.
Allow the cookies to cool for 5 minutes on the tray, before transferring to a cooling rack. Enjoy!

I tried store-bought cookies more than a year ago.. pretty often make my own 🙂 I do love lemon flavour in cookies, yours look tempting! But 200g of white chocolate seems too sweet for me, though I like white choco 😀
Hi Mila, you could certainly reduce the amount of white chocolate, though it really didn’t seem over-the-top sweet/chocolatey while eating them (particularly if you use a good-quality choc) and get the balance of acidity right from the lemon juice. Thanks so much for your comment! Cheers, Margot

Lemon and white chocolate make a perfect combination. I’m glad that you decided to pick up the ingredients for a cookie recipe instead of a packet of cookies. Nothing beats homemade cookies and yours look really lovely!

oooh these look good. Shop bought never ever match up to home made. I never mind if my family devours a packet of shop bought in one sitting but get very petulant when my morning’s baking effort disappears in one go, so sometimes there’s a place for shop bought. Oh you’re not bad at all Angie! Almost all of us buy store-bought at least some of the time! There’s never enough time in the day/week to be making everything from scratch. I guess I was just trying to encourage those who don’t spend much time in the kitchen (and I realise that rules out almost all of my lovely blogging friends) to get in there and get baking with one of their loved ones… You and I both know how much fun that really is! 🙂

I would happily replace all my biscuits with these ones, shop bought or otherwise. They look and sound so delicious! I don’t put lemon zest into biscuits often, perhaps the occasional shortbread, so these are next to try 🙂

Whilst I never have supermarket bought biscuits in my home, I (cringe) do have to admit that lack of time has me buying them for my kitchen garden volunteers to have with their cup of tea. Which is embarrassing just to write, because I’m all about teaching to cook from scratch! Hmm, couldn’t help but notice very nice, white chocolate on special offer in a small store nearby. And I never normally eat the stuff. These are tempting. Do they keep well? It’s just any biscuits I’ve made before go stale after two days – my flat is that damp! Even wrapped and stored in airtight containers. Of course, I could scoff the lot before then!
Johnny, I’m not sure if our biscuits will make it through to Day 3 or 4, but I just tested another one out for you now (in the interests of science of course…) and they remain just as lovely as they were yesterday! Perhaps if you cook them for an extra minute or so and allow them to become quite crisp, it might help in keeping them fresh for a little longer. After they’ve cooled completely, mine just sit in a wax-paper lined airtight tin and they seem to do okay. Hope you give them a try, the lemon zing is lovely (I tried just a tablespoon of juice initially, but it didn’t quite sing lemon enough to me).

Actually, I’ve just bought very delicious dried cranberries sweetened with pure pineapple juice this evening and those would work a treat here. No, not baking right now so nothing suitable for F&F. Have made panisse for the fist time, and had those this evening. With fresh thyme and za’atar. So good! But not ready to go as a post as yet. And likewise, have a great weekend. I’m desperate for some beauty sleep!
